Homemade Spätzle

Ingredients

Basic recipe
300 g wheat flour
4 eggs
1 level. tsp salt
12 tbsp water

Allgäu cheese spaetzle
300g wheat flour
4 eggs
1 level. tsp salt
12 tbsp water
150g Allgäu Emmental cheese, grated
50g clarified butter
3 large onions

Spinach spaetzle
300g wheat flour
4 eggs
1 level tsp salt
12 tbsp water
200g frozen, chopped spinach
50g butter

Herb spaetzle
300g wheat flour
4 eggs
1 level tsp salt
12 tbsp water
3 tbsp mixed chopped herbs

c h g – Spätzle-Profi Instructions for use:

Pour plenty of water into a pot (Ø 24 – 28 cm), add salt and a tablespoon of oil and bring to the boil. Rinse the c h g – Spätzle-Profi with cold water and place it on the pot opening.

Put a portion of dough on the c h g – Spätzle-Profi and use the scraper to push it through the dough openings into the boiling salted water. Take the c h g – Spätzle-Profi out of the pot and spread the dough from the back into the boiling water.

Place the c h g – Spätzle-Profi in cold water until you are ready to prepare the next portion.

Preparation

Basic recipe Preparation:
Sift the flour into a bowl, make a well in the middle, mix with the eggs, salt and a little water, starting from the middle. Gradually add the remaining liquid. Make sure that no lumps form. Beat the dough until it forms bubbles. Spread the dough in portions through the c h g – Spätzle-Profi into boiling salted water. The spaetzle are cooked when they float on the surface of the water. Remove the finished spaetzle from the cooking water with a slotted spoon and dip briefly in fresh warm water. Keep the drained spaetzle warm in a bowl.

Allgäu cheese spaetzle preparation:
Prepare as for the basic spaetzle recipe, keep the spaetzle warm in an ovenproof dish, sprinkling each layer with some of the grated cheese, the top layer should be made of cheese. Cut the onions into rings and fry in clarified butter until golden brown. Pour over the cheese spaetzle before serving.

Spinach spaetzle preparation:
Prepare as for the basic spaetzle recipe, let the spinach thaw at room temperature and add to the basic spaetzle recipe. Brown the butter and toss the spaetzle in it.

Herb spaetzle preparation:
Prepare as in the basic spaetzle recipe, add the chopped herbs to the dough and prepare in portions as described. Tastes particularly delicious with pan-fried meat.
